Have I told you lately...

that I have an obsessive personality?
Well, I do.
Aaron and I recently started watching Dexter on Netflix.
Although I was a little freaked out at first, I just COULD NOT stop watching it.
There's just something about Michael C. Hall that just draws me in :)
....the stories are good, too. haha
Anyway, we finished season 1 last night after watching it for 4 straight hours. It only took us like 3 days to watch the entire season. So, if that's any indication, you guys should probably check it out.

Besides Dexter, it seems like all our favorite new shows come from either HBO or Showtime. SO, I called the cable company to see how much it would cost to get those channels added, annnnnnnnnnd they wanted $38.80 A MONTH!!! How ridiculous is that? I guess we'll have to just keep waiting until the seasons come on dvd.

And, while I have still had NO luck finding a job, Aaron has landed one through the work study program at school. It's only 20 hours a week, but something is better than nothing, right?

I'm leaving you with an amazing recipe that I tried this week and ABSOLUTELY loved. It's so easy, Matt could probably do it.

FIESTA CHICKEN ENCHILADAS

What You Need

1 small Onion, chopped
1 clove Garlic, minced
1 lb. cooked boneless skinless chicken breasts, shredded
1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp. chopped cilantro
1 tsp. Ground cumin
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheese, divided
8 Flour tortillas (6 inch)

Make It

HEAT oven to 350°F.

HEAT large skillet spayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well.

SPOON about 1/3 cup chicken mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese.

BAKE 15 to 20 min. or until heated through.

Embarrassment to Society

I will never understand why some people choose to air their dirty laundry out on facebook.
I mean, yes, it entertains me to read that you cheated on your boyfriend with a married man and now you don't understand why he doesn't want you anymore. Or that you had a baby and didn't know you were even pregnant, but COME ON people.....who in their right mind thinks it's okay to share that kind of stuff with the world your so-called friends? Don't we have any kind of values or morals these days? I guess reality t.v. really has rotted our brains.

What did you say?

I don't think I have ever told you all about my Uncle, but I guess it's about time.

He is pretty much one of the most embarrassing people in the whole entire world. He never forgets anything, and if it involved you, he won't let you forget it either.

For example.......
When I was pretty young, my Aunt found out she had a tumor. After surgery, she couldn't bathe herself, so my Uncle gave her sponge baths. To my [probably] 10 year old self, I thought that was the most disgusting thing I'd ever heard of.

Then again, I wasn't the child that liked to run around naked, either. I liked to be fully clothed from head to toe at all times. So, being young and naive, I said 'I'm never gonna let anyone see me naked.'

So, my Uncle calls me the other day. He saw my engagement pictures, and for some reason, guess what comes to his mind? That time that I proclaimed to never let anyone see me naked. Why? Because he is completely inappropriate.

Not only did HE remember it, he decided to call me and remind me.........
'So, what are you going to do about Aaron?'
What do you mean what am I going to do about Aaron?
'I mean, you said you weren't going to let anyone see you naked. Does Aaron know this?'
DEAD SILENCE on my end.
HYSTERICAL laughter on his end.

SEE WHAT I MEAN? Completely inappropriate.

Another big bang and you're down on the floor

I've noticed lately that quite a few of my blogger friends have kind of fallen off the radar, and I won't lie, it makes me a little sad.

But, I do realize that most people have a lot of stuff going on in their lives right now, so I am trying to over look it. It has forced me to go out and look for new people to read, so that is a good thing, right?

Anyways, I have so many things I could say at this point, but they are all complaints. Which is why I haven't blogged in a few days; because every time I feel like I want to blog lately, it is to complain, and I know you all get tired of reading about other people's shady situations, so moving on....

Today was just stressful, we'll leave it at that.
And, one of my favorite ways to release said stress is to cook!

So, I got my pizza dough recipe from Smitten Kitchen, and went to town [figuratively].

We wanted something other than your average tomato sauce, pepperoni, cheese pizza.
We came up with the combination of alfredo sauce, shrimp, and spinach pizza topped with mozzarella cheese.

It was so delicious!

Now, we are waiting for our tummies to settle so we can go get some ice cream!

Patience is a Virtue

On Monday I recieved a letter in the mail from the financial aid department at my school. They let me know that I did, indeed, receive a grant this year. That, I was happy about. I read on to find out that I am getting almost a thousand dollars less this year than I got last year, which really freaked me out. I instantly began stressing. I have so much on my plate already, it's hard even thinking about trying to come up with more money to pay for school. I've never taken out a loan before, and have done everything I had to in order to not incur debt while in college. Nanny offered to give me a monthly 'allowance' to help with the $1000 that I'd be missing from the grant. I hate asking her for money, but I didn't have to ask, she just offered. I couldn't really refuse at the time, I didn't know of any other offers. Until today. I got a letter in the mail from my school. I let out a huge sigh before I opened it, because I was sure it was going to be the bill for the tuition. BUT IT WASN'T. It was a letter offering me a scholarship from the art & design program. And guess for how much? That's right...$1000! Crazy, huh? But I am very blessed for this to come my way, and now I can stop stressing so much! Good things truly do come to those who wait :)

Patron Saint of Lost Cause...

Last night was my first time going to a gay club, and I must say....I had a blast!

My friends from work invited me out, so I went.


Ran into my old friend David, who I found out was performing in the talent show. If you can't tell, I was super excited.


I was approached by a man who asked me if I was gay, straight, or bi. I told him I was straight, engaged in fact. He was sad, because he said his friend sent him over because she wanted to get with me. HA. The rest of the night, Sabrina pretended to be my girlfriend so we wouldn't have to worry about anyone else.

Pam & Misty were jealous, so they became g/f's, too.

You sure have changed since yesterday

Remember when I told you all that I was going to see Paramore & No Doubt in concert soon?
Well, tonight was the night. [or last night, for those of you who are normal and actually went to bed]
Anyways, I am extremely exhausted, but I could NOT wait to post this. Not only did I laugh while filming this, I also laughed out of control while watching it several times. Maybe it was just the lack of sleep talking.

Never wanna tell a lie..

HAPPY MEMORIAL DAY WEEKEND :)

Nanny has been asking me to clean out this old desk of my sister's that we used to pile all our stuff in. I found lots of old letters, diaries, and 'creative writing' folders from our elementary/middle school years.

I threw most of it away, but kept the good stuff. And by good, I mean funny. Well, to me at least.

I almost busted a gut reading this stuff. When I was in the third grade, I apparently thought I had 3 brothers & 2 sisters. I only have TWO brothers and ONE sister. Nanny said I must have been counting my imaginary friends.

In the fifth grade, I wrote a letter to Bill Clinton. Take a look for yourself:

Yep; I'm engaged!!

The story?

Well, it wasn't story book, but it's mine, and that's all that matters.

Aaron and I came home from a weekend in Auburn, and he began packing his things for basic. He asked me if I wanted to go to Walmart with him to get a few last minute things, and I said yes. So, we shop around, and then decide to go to Subway for dinner. Aaron asks me what I want, and JOKINGLY, I say I want a ring. We laugh it off, order, and come home to eat. While we were eating, we were watching Rock of Love, and the girls were choosing which rings they'd want if Bret chose them. Of course, I made some smart remark, and he just ignored me, like usual. He got up, went to his closet, came back to the living room. He asks me If I'm ready. I froze. He's standing there with something behind his back. He gets down on one knee, still had his hands behind his back, and I'm saying 'Are you serious? Is this for real?' And he pulls out a box, and opens it, and there sits the most beautiful ring I've ever seen. I immediately started crying. I was soooooooo shocked! I mean, we've talked about it before, but I didn't seriously think it was going to happen for a while. I obviously said yes, and am now the proud future Mrs. Altgilbers :)

let it be a lesson learned.

This post is probably going to be all over the place, so I apologize in advance.

Sometimes, I just really want to tell people to get over themselves. No one I've met on here, just people in real life.

Our teacher finally gave us back our abstract expressionist pieces yesterday. Here is one of mine:


In other art news, I had a 'plaster disaster' yesterday. In my sculpture class, we are supposed to be making large scale sculptures out of plaster. So, our teacher had us make our own boxes [out of wood] to cast our blocks in. Everyone else pretty much made your standard square. But no, he had me make a weird shaped box. Some where along the line, something went wrong, because when we went to pour the plaster in, it was like a broken dam, and it ended up all over the floor.


Four of us hurried to scoop up as much of it as we could before it hardened to the floor. Like I said....DISASTER. My teacher just laughed. Apparently it was amusing to him. And, had it not been MY PROJECT that almost got ruined, I'm sure I would have been laughing as well.

Alabama has been very stormy the past few days. In fact, I skipped two classes because of the terrible weather, and I'm sure I'll regret it next week. Oh well. I had to go to one of the local high schools today to do observation hours. My friend Tiffany and I sat through a two hour Art I course. It reminded me a lot of the time that I sat in my sister's classroom for an hour, and it seriously makes me reconsider what I want to do 'when I grow up'.

Unbelievable.

It snowed yesterday in Southern Alabama. I know, some people are wondering why everyone is making such a fuss about it. But really, I only remember it snowing here once before when I was a little kid, and I remember Nanny not letting us go play in it because she was afraid we'd get pneumonia. The snow yesterday, though, wasn't even sticking to the ground. Just roof tops and cars.



This was the best I could do as far as pictures were concerned. I don't love cold weather, so I wasn't going to venture out in it. Time for class. Hope the weather gets warmer, soon, since Spring Break is next week!
